Ingredients:
4 cod fillets (about 6 oz each)
3 tablespoons olive oil, divided
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
Salt and freshly ground black pepper, to taste
1 lemon, sliced (plus more for serving)
2 tablespoons freshly chopped parsley
1/4 cup grated Parmesan cheese
Lemon wedges, for garnish
Directions:
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
Season the Cod: Pat the cod fillets dry with paper towels and place them on the prepared baking sheet. Drizzle each fillet with 1 tablespoon of olive oil, and season with minced garlic, dried thyme, paprika, salt, and black pepper.
Add Lemon and Cheese: Arrange lemon slices around and on top of the cod fillets. Sprinkle grated Parmesan cheese evenly over the fish.
Bake the Cod: Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork. Cooking time may vary slightly depending on the thickness of the fillets.
Broil for a Golden Finish: For a golden and crispy top, switch the oven to broil for the last 2-3 minutes of baking. Watch closely to prevent burning.
Serve: Remove the cod from the oven and garnish with freshly chopped parsley and additional lemon wedges. Serve hot with a side of steamed vegetables, rice, or a fresh salad.
