Ingredients:
6 large bell peppers (red, yellow, or green)
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 pound (450g) ground beef or ground turkey
1 teaspoon dried oregano
1 teaspoon paprika
Salt and freshly ground black pepper, to taste
1 can (14.5 ounces) diced tomatoes
1 cup cooked white or brown rice
1 cup shredded mozzarella cheese, divided
1/2 cup shredded cheddar cheese
2 tablespoons tomato paste
1/4 cup fresh parsley, chopped (plus more for garnish)
Directions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a large baking dish and set aside.
Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright. Place the peppers in the prepared baking dish, cut side up.
Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.
Add the Meat and Seasonings: Add the ground beef or turkey to the skillet, breaking it up with a spoon. Cook until browned, about 6-8 minutes. Stir in the dried oregano, paprika, salt, and black pepper.
Combine with Rice and Tomatoes: Add the diced tomatoes (with juices), cooked rice, 1/2 cup of the shredded mozzarella, cheddar cheese, tomato paste, and chopped parsley. Stir everything together and cook for another 2-3 minutes, allowing the flavors to blend.
Stuff the Peppers: Spoon the filling mixture evenly into each bell pepper, packing it down gently. Sprinkle the remaining 1/2 cup of shredded mozzarella on top of each pepper.
Bake: Cover the baking dish with foil and bake in the preheated oven for 35 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
Serve: Remove from the oven and let the peppers cool for a few minutes. Garnish with extra chopped parsley before serving. Enjoy with a side salad or crusty bread!
