1 tablespoon freshly grated ginger

1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon hoisin sauce
1 small green cabbage, thinly sliced
2 large carrots, shredded
4 green onions, thinly sliced (plus more for garnish)
2 tablespoons toasted sesame seeds, for garnish
Fresh cilantro, chopped (for garnish)
Directions:
Cook the Ground Meat: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground chicken or turkey and cook, breaking it up with a spoon, until no longer pink, about 5-6 minutes.
Sauté Aromatics: Add the chopped onion, minced garlic, grated ginger, and crushed red pepper flakes (if using) to the skillet. Cook for another 2-3 minutes until the onion is softened and everything is fragrant.
Add Sauces: Stir in the soy sauce, rice vinegar, sesame oil, and hoisin sauce. Cook for 2 minutes, allowing the flavors to meld together.
Add Vegetables: Add the thinly sliced cabbage, shredded carrots, and sliced green onions to the skillet. Sauté for 5-6 minutes until the vegetables are tender but still have a bit of crunch.
Serve: Remove from heat and garnish with additional green onions, toasted sesame seeds, and chopped fresh cilantro. Serve hot as is or over a bowl of steamed rice for a more filling meal.
