French Peas (Petits Pois à la Française)
Ingredients: 500 grams shelled peas (or frozen) 2 cloves garlic, crushed 1-2 shallots, finely chopped 4 spring onions, chopped 60 grams butter 1 cup vegetable stock ½ Romaine lettuce, sliced 1 sprig each of thyme and rosemary 1 bay leaf Salt and pepper to taste Chervil for garnish (optional) Directions: Sauté shallots, garlic, and herbs in butter. Add lettuce, peas, and stock. Cook for 5-8 minutes. Reduce leftover liquid, whisk in butter, and pour over peas. Garnish with chervil.
