Ingredients:
2 cups dried chickpeas (soaked overnight)
5 garlic cloves
5 spring onions, chopped
1 cup fresh parsley, chopped
1 cup fresh coriander, chopped
1 tsp ground cumin
1 tsp ground coriander
½ tsp cayenne pepper
½ tsp black pepper
Zest and juice of 1 lemon
½ tsp baking powder
Vegetable oil (for frying)
Directions:
Prepare Chickpeas: Soak chickpeas overnight in the fridge, then drain.
Toast Spices: Toast cumin and coriander seeds, then grind.
Blend Mixture: Process chickpeas with spices, garlic, herbs, lemon zest, and juice until coarse. Chill for 1-2 hours.
Shape and Fry: Form balls and fry at 320°F (160°C) for 6 minutes.
